What I Eat In A Day: March 27, 2018

Hi everyone! So I’ve recently discovered a bunch of really cool health and wellness peeps on youtube and some of their more popular videos document what they eat in a day. I am not good on camera (queue awkward rambling) so I decided to take some pictures and write about what I ate yesterday. Just as a reminder, it’s all about BALANCE! Some days I eat like a rabbit, other days I have an entire frozen pizza to myself, but generally I try to stick to a low carb diet.

Breakfast: I recently discovered my love for fresh squeezed orange juice, so I picked up a bottle from Lucky’s over the weekend. Most days I skip breakfast during the week due to time constraints and just not really having an appetite, but today I was feeling it so I Processed with VSCO with c1 presetmade a whole grain waffle. I’m going to be honest, these are not my thing. The only reason I add some syrup is to help choke down this cardboard. I like the other waffles from Van’s so if you are in the market for frozen waffles, I would definitely recommend another flavor (Kashi also makes great frozen waffles). If I had more time I would have scrambled an egg or made a couple of slices of turkey bacon just to add some protein.

Lunch: I usually keep things pretty simple for lunch because I’m often short on time with driving home to walk Lola. I’m a weirdo and don’t like mustard or mayo so I usually eat my sandwiches dry (if I have an avocado I’ll spread some of that on there) but I really want to talk about my love for this bread!! The rosemary & olive oil flavor is my favorite but the 5 grain flax (purple packaging) is also pretty decent if you wanted to lower the Processed with VSCO with c1 presetcalories. These were BOGO at Publix this week, but I usually will buy whatever’s on sale (Food for Life ezekiel bread and eureka! seeds the day are my other two favorites)

Dinner: So dinner happened kind of late because I got lost in the Target wormhole with my sister after work. The finished project was literally just a bowl of veggies over lettuce, but I had: roasted brussels sprouts, red onion, green pepper, baby bella mushrooms, black beans, tomatoes, lettuce and a squeeze of half a lime topped with a sprinkle of shredded cheese. I try to keep a lot of veggies on had so I don’t get bored with dinner during the week, and I find that adding a lot of color to my dish makes me more excited to eat veggies (and less sad about the lack of carbs).

Not Pictured: I had a gala apple for a snack around 3:00pm and I accidentally had a small vanilla ice cream cone from Dairy Queen on the way back from Target with my Processed with VSCO with c1 presetsister. I also drank two cups of black coffee in the morning and had 2 liters of water throughout the day.

There you have it! I actually really enjoyed documenting my meals for the day, and I feel like looking back on what I ate helps me to see what I’m lacking in my diet. Yesterday’s meals were pretty simple, and could have used more protein, BUT I’m really impressed with how many veggies I ate. If you want to see more posts like this, please let me know!
